AMA

Using ingredients from small producers at the market and nearby, and based on traditional cuisine, these young chefs create innovative dishes. Javi Rivero and Gorka Rico received the Revelation Chefs Award at the Madrid Fusión 2023 congress, and they also hold a Michelin Star, a Green Michelin Star, and two Repsol Suns.

The team led by Roberto Ruiz fully harnesses the talents of traditional home-style cooking and its products. It is the expression of simple gastronomy, highlighting the flavor of the product on the plate, in a beautiful setting. Tolosa Beans prepared as in the old days in traditional wood-fired kitchens, along with dozens of other products bought at the fair, and grilled fish and steaks are the main stars: all paired with different types of txakoli produced in the winery where this restaurant is located. This restaurant has been awarded a Green Michelin Star and two Repsol Suns.
